2023 Road Less Traveled Cabernet Franc
100% Cabernet Franc from Wallula Vineyard. It has beautiful aromas of rainier cherry, red plum, orange peel, sea salt minerality, and mountain sage.
Lovely clarity and dark black/red hue. Beautiful aromas of rainier cherry, red plum, orange peel, sea salt minerality, mountain sage, and marjoram. Deep flavors of dark red cherry & plum, citrus peel, tangy acidity, and saline minerality. The finish is rich and lengthy. Enjoy through 2037.
Fermentation: 100% destemming into open-top fermenters. Fermented with Saccharomyces cerevisiae, Sacchromyces uvarum, and Pichia kluyveri. Punched down twice a day with three pulse air treatments. Pressed at dryness.
Élevage: Aged in 300 liter French oak barrels, AnA Selection and Tollellerie de Mercurey (17% new) for 27 months. Bottled unfiltered and unfined.
INGREDIENTS & ADDITIONS: Cabernet Franc grapes, yeast, organic and inorganic yeast nutrients, tartaric acid, and minimally necessary sulfur dioxide.
