2022 FOI #16 Super Fuga
71% Cabernet Sauvignon and 29% Sangiovese from Weinbau and RKP Vineyards. Bright red fruit, deep and rich aromas. Flavors of plum, cherry, currant, coffee bean, baking chocolate, and cedar. Label by our middle daughter, Keegan Isenhower.
Tasting notes
Dark red hue. Dark red fruit aromas of plums, cherry, currant, graphite, medium roast coffee bean, baking chocolate, cedar, and dried herbs (marjoram and thyme). The mouthfeel is round and rich with flavors of cherry, cedar, currants, and coffee bean. The Wild Thyme is well balanced and tight. Bordelais-like. Enjoy though 2024.
Production notes
Fermentation:
100% hand-harvested, and hand-sorted fruit. Fermented with organic Saccharomyces cerevisiae and Pichia kluyveri. Punched down twice daily with three pulse-air treatments. Pressed at dryness.
Élevage:
27 months in 17% new 300 Liter French oak barrels (Remond) and 500 Liter French oak puncheons. Bottled without fining or filtration.

Ingredients: Cabernet Sauvignon & Sangiovese grapes, yeast, tartaric acid, and minimally necessary sulfur dioxide.
