Tasting notes
Cabernet Sauvignon from Wallula Vineyard, primarily clone 412 with a touch of clone 33. Massively dark red hue. Aromas of black currant, black cherry, black olive, fig, wind blown flowers, and medium toast vanilla bean. The mouthfeel is copious, rich, thick, and intense. The Cabernet Sauvignon has flavors of currants, black cherry vanilla, clove, and toasty joy. The tannins are persistent, fine-grained, and lengthy. Awesome! Drink through 2037
Production notes
Fermentation:
100% hand-picked and destemmed. Fermented with Saccharomyces cerevisiae and Pichia kluyveri. Punched down twice daily and received three pulse-air dose until dryness.
Élevage:
27 months in 60% new 300 L French oak barrels (Tonnellerie Mercurery, AnA Selection, and Tonnellerie du Sud-Ouest). Bottled without fining or filtration.

Additions: Cabernet Sauvignon grapes, yeast, organic and inorganic yeast nutrients, tartaric acid, and minimally necessary SO2.
