The Cabernet Sauvignon is from Konnowac, Phinney Hill, and Weinbau. The Merlot is from RKP and the Cabernet Franc is from Wallula. The wine is defined by wild blackberry, pencil shavings, and aromatic vanilla bean aromas. On the palate, a plush core of dark currant and olive balanced by refined astringency of black tea and cacao. The texture is pure, fresh, and consistent with a long finish. Wonderful balance and delicious. Enjoy through 2035
Fermentation:
100% hand-harvested, 100% destemmed. Inoculated with a variety of organic yeasts (Saccharomyces cerevisiae, Saccharomyces uvarum and Pichia kluyveri). Punched down two times daily with multiple pulse-air treatments. Pressed at dryness.

27 months in 40% new 300 liter French oak barrels (Tonnellerie Saint Julien)
Additions: Cabernet Sauvignon, Merlot, & Cabernet Franc grapes, yeast, organic yeast nutrients, tartaric acid, minimally necessary SO2
