2022 Rara Avis Grenache
Rara Avis is Latin for "rare bird" and is a 77% Grenache, 18% Mourvèdre, and 5% Syrah from Olsen Ranch, RKP, and Tudor Vineyards. Bright red fruit aromas and flavors of sultry earthy notes weaving through. Lovely and exotic!
We have produced Grenache since 2006. The Rara Avis has aromas of strawberry, red plum, cherry, and black pepper seasoned roasted meat. The flavors mirror the aromas with additonal minerality and toasted herbs. The mouthfeel is tight, mouth-filling, and long. Enjoy through 2030.
Fermentation: 100% hand-harvested and hand-sorted fruit. Destemmed and must-pumped to open top fermenters. Inoculated with a variety of organic yeasts (Saccharomyces cerevisiae, Saccharomyces uvarum, and Pichia kluyveri). Punched down twice daily with three pump-overs. Pressed at dryness.
Élevage: 20 months in 300 liter and 500 liter used French oak barrels. Racked twice.
INGREDIENTS & ADDITIONS: Grenache, Mourvèdre and Syrah grapes, yeast, organic & inorganic yeast nutrients, tartaric acid, French Oak, and minimally necessary sulfur dioxide.
