2020 Wallula Vineyard Cabernet Sauvignon
Deep dark fruit that is tight and fresh with notes of cigar box and eucalyptus. Beautiful and rich with smooth tannins.
Tasting notes
Deep and dark red hue. Tight and fresh aromas of blackcurrant, blackberry, and boysenberry. Hints of graphite, sweet French oak, vanilla, and a touch of cigar box. Very fruity. The mouthfeel is soft, sweet, and generous. The mouth is brimming with dark berry fruit with hints of herbal spices, and eucalyptus. The tannins are relatively restrained for a Cabernet Sauvignon and very pleasing to drink.
Production notes
Fermentation: 100% hand-picked and destemmed. Fermented with CVRP Saccharomyces cerevisiae. Punched down twice daily until dryness
Élevage: 21 months in 33% new 300 L French oak barrels (mercurey and AnA selection)

Additions: Yeast, organic and inorganic yeast nutrients, tartaric acid, and minimally necessary SO2
